WITH EXPERIENCE IN THE TRADE AND A LITTLE HOME BREWING UNDER THEIR BELTS, TWO FRIENDS - WHO’D FIRST MET WHILST WORKING AT A BRISTOL BREWERY - STARTED THE CONVERSATION, “FANCY STARTING A BREWERY?”

One thing led to another, and with some help from brewing friends, Dan Snow and Calum Doutch founded Cocksure Brewing. The pair began cuckoo brewing and launched their first product in early 2016 (a bottled pale ale “P’ALE”) to test the market. Tolchards were the first wholesaler to list the product and so of course, it got off to a good start.

'The Chicken Shed' is a true labour of love and enormous source of pride for the boys.

Since that point the pair have purchased their own brew house and moved into an 8000sqf premises: nicknamed ‘The Chicken Shed’, this vast space now houses the 10 brewers barrel kit which bubbles away with both cask and keg beer. After hundreds (if not thousands) of hours spent building, labouring, saving, cleaning, plumbing, welding, saving, lifting, painting, driving and more saving - let alone long nights spent re-assuring two miffed wives, one relocation from London to Bristol and one new born baby - the Chicken Shed is a true labour of love and enormous source of pride for the boys.

The ethos behind the core range (P’ALE, Session IPA and RED) is to create great beer for beer drinkers; beers that are flavoursome without being overpowering, drinkable without being bland. Cocksure Brewing uses only the best quality hops and malt in order the produce the modern, aromatic beers which will become firm-favourites.

In time, the brewery plans to produce more experimental, one-off brews for limited edition runs. Not only is Cocksure Brewing focussed on producing beers with integrity, the company is made of wholesome stuff too. Cocksure Brewing has partnered with a leading charity, Farm Africa, and donates £1 for every cask or keg sold. The scheme has been named the ‘Give A Cock A Home Project’ and money raised helps to provide chickens, cockerels, coops and feed to families in need in Africa. WITH THE CRAFT BEER CERTAINLY BECOMING A CROWDED MARKET, TELL US WHAT IS SETTING COCKSURE BREWERY APART. 

The market is indeed a busy place but that can only be a good thing for the category overall; If you’re not producing a good enough quality product, then someone else will. The category is booming and the standard of beer available is phenomenal. More people than ever are feeling encouraged to try something new and we’re excited to be part of it. As part of this trend were seeing a lot of brewers producing wild and wacky products. These have their place of course, and are fantastic as a one-off, but the alternatives seem to be a lot of brewers continuing to produce boring, bland beers.

Our aim is to create session-able, flavoursome beers which allow consumers to try something different and exciting whilst being able to enjoy more than one. As beer fanatics, we plan to create the odd small batch, wacky brews for limited-edition runs, but for the meantime we’re focussing on earning our stripes and continuing to create awesome, session-able beer.

HOW DID YOU COME UP WITH THE NAME COCKSURE? 

Cocksure Brewing is all about being confident and backing yourself. It may seem a slightly outrageous name but we have given up everything to start this business, and if we don’t back ourselves, nobody else will! We want this message to translate to our consumers to encourage more people to buck the status quo and try something different.

LOOKING AT YOUR WEBSITE YOU HAVE OBVIOUSLY TAKEN TIME TO CONSIDER YOUR BRANDING, HOW IMPORTANT DO YOU FEEL BRANDING IS? 

We feel branding is very important, and in many ways almost as important as the beer given how competitive market is. We want to create a brand which engages consumers and has an element of fun, that’s what it’s all about. Life is too short not to have fun!

WHAT CAN WE EXPECT IN THE FUTURE FROM THE COCKSURE BREWING AND TOLCHARDS PARTNERSHIP?

From this partnership you can expect high-quality, consistent beers with a professional service alongside. We will continue to produce fresh beer and push the boundaries with exciting, quality ingredients. Our beers will remain drinkable and sessionable and our brand will always be bold and fun.

WHEN PEOPLE ARE SAMPLING A CRAFT BEER WHAT ELEMENTS SHOULD THEY BE THINKING OF E.G FLAVOUR, STRENGTH, COLOUR ETC?

For us, we think it’s important to create well-rounded beers. By this we mean being able to taste and smell each element of the brewing process. We don’t just chuck hops in for the sake of it, flavours are balanced to ensure the consumer enjoys all areas of the beer. So we would look for aroma, mouthfeel, taste (which can include sweetness or bitterness) and colour. For example, in our RED beer you’ll notice a natural red glow from the cara-medium malt, a citrus and mango aroma from the hops (summit and centennial if you’re wondering), a peppery spice from the rye and a dry finish. We love what we can achieve with a few natural ingredients!
